2015 Rosé; 1st disgorgement: The Rosé was made from 75% Pinot Noir and 25% Pinot Meunier from Lofty Vineyard. The hand picked bunches were de-stemmed without crushing and steeped on skins for 36hrs. After 9 months in old French oak barriques with bâtonnage, the Rosé was racked to tank following malolactic fermentation. This disgorgement of De Salis Rosé spent 48 months on bottle lees.
The colour is bright ruby with a soft fine bead and ripe watermelon & strawberries on the nose leading to a complex palate of blood orange, Dulce de Leche and butter & jam on toast. Finishes on long fine acid and Campari. Cellaring: 8 years post disgorgement. Very Limited: $90.00
